Fujian Green Oolong Tea /Tie Guan Yin is an authentic oolong tea, brewed with leaves from Guizhou, China. Grown in subtropical climate, ideal for oolong cultivation. This tea has a honey aroma and a warm toasted nut flavor. It is also called "Iron Goddess" or "Goddess of Mercy".
Fujian Green Oolong tea has its origins dating back to 18th Century. A tea plant (Fujian)was found in a cave behind the Guanyin temple.
Another story around Fujian Green Oolong tea is that a scholar discovered the tea plant by the Guanyin rock. The scholar presented the tea to Emperor Qian Long who declared that it has the weight of iron and the appearance of Guan Yin.
Variety & Processing
Tie Guan Yin is the name of the preferred variety of tea plant used in most " Iron Goddess" teas. Although there are others, which are used to make this type of tea (Ben Shan, Huang Dan and others).
Tie Guan Yin follows standard harvesting and processing for Oolongs (pluck, wither, cool, shake, oxidise, roll, dry, refine and roast). Having said that, there are a few different styles of "Iron Goddess".
Traditional Tie Guan Yin (Chuan Tong) is oxidised more and at room temperature, whereas, the more modern light Tie Guan Yin (Qing Xiang) borrows the more Taiwanese approach of cold room withering and lower oxidation.
This is why modern Tie Guan Yin tends to have a more flowery and rich aroma compared with the thicker texture of traditional tea.

Brewing/ Preparation
The preparation of oolong tea depends on the type of tea you are buying. Different types of teas require different brewing temperatures and steeping time.
You will need
- Fresh hot spring water at 90-95C (194-205degrees Faranheit)
- 1 teaspoon of oolong tea
- A clean cup or glass
- A spoon
- Honey is optional and better than sugar due to its anti-bacterial properties
Method/ Process – Western Style.
The steeping temperatures can vary. Generally, a time range for 2-3 minutes.
- Use a teaspoon of loose leaf for 150ml water, adjust the ratio according to the amount of tea you’re making
- Figure out the best steeping time, by tasting at, different steep timings. If you prefer you may taste your oolong tea in between, to figure out the flavor and taste notes that work best for you.
- You can steep Fujian oolong tea 4-5 times or more provided you don’t over-steep your tea.

How to store Fujian Green Oolong tea
The more oxidized the tea is, the longer its shelf time or storage time. Oolong teas can be stored up to 24 months
- Store your oolong tea in a cold and dark place.
- Away from items like spices and coffee that could leach their flavors to your tea.
- It is also a good idea to store your tea in an opaque and airtight jar.
A word of caution
Any tea taken in excess of that 3 cups is likely to be harmful to you. Drinking more than 4 cups of oolong tea per day can cause side effects due to the caffeine present and can range anywhere from headaches, vomiting, diarrhea to heartburn. Too much tea can also lead to high blood pressure due to caffeine.
